Refreshing Watermelon Salad, Healthy Living + Travel
From Vancouver Island’s Grotto Spa, Tigh-Na-Mara Seaside Spa Resort, this watermelon summer salad with a lime and honey dressing is quick to prepare and great for BBQ parties. Impress your guests with this unique twist on the classic watermelon salad!

Salad Ingredients:

1 cup watermelon, large dice
1/2 cup cucumber, medium dice
1/2 avocado, medium dice
1/2 red onion, julienne
1/4 cup feta
1 sprig of fresh mint, leaves torn roughly
black pepper to taste

Instructions

  1. Peel and halve red onion, slicing it into fine half-moons. Place it in a small bowl to steep with the lime juice.
  2. Remove the rind and seeds from the watermelon, and cut into 1 1/2 inch chunks. Cut feta into similar pieces, and put them in a large bowl. Don’t chop the parsley, instead tear off sprigs and add them to the bowl along with the chopped mint.
  3. Add the onions and juice into the bowl along with the oil and olives. Toss the salad gently so that the feta and watermelon don’t lose their shape.
  4. Add black pepper to taste.

Lime & Honey Dressing Ingredients:

1/4 cup lime juice
1/4 cup olive oil
2 tbsp. honey
2 tbsp. chopped parsley
I garlic clove, minced
1 shallot, minced
salt & pepper

Instructions

Combine all dressing ingredients in a jar, season with salt & pepper, shake until well combined then gently toss with salad ingredients.  Marinate for 15 minutes and SERVE!
