A taste of France and Québec has arrived in Whistler with the grand opening of Lorette Brasserie on Saturday, April 26, located in the Summit Lodge Boutique Hotel. This cozy 90-seat eatery is the latest creation from the Paré Restaurant Group — the team behind local favorites Quattro and Caramba.
Hearty Cuisine with Heartfelt Roots
Named after the mothers and grandmothers of co-owners Jay and James Paré, Lorette Brasserie is a tribute to timeless French and Québécois cooking. Executive Chef Shane Sluchinski, inspired by childhood memories of cooking with his French-Canadian grandmother, brings those comforting, home-style flavors to life in every dish.
Morning Delights & Elegant Evenings
Lorette offers a full breakfast and weekend brunch service from 9 a.m. to 1 p.m., followed by dinner from 5 p.m. into the evening. The menu features brunch favorites like Brioche French Toast, Croque Madame, and Eggs Benedict four ways, while the dinner menu elevates the experience with dishes such as:
- Beef Tartare & Bone Marrow
- Lobster Vol-au-Vent
- Steak au Poivre
- Suckling Pig Tourtière with optional foie gras
- Yarrow Meadows Duck Leg Confit
Wine, Cocktails & Cozy Vibes
Lorette’s bar offers a thoughtful selection of wines from France and British Columbia, alongside craft cocktails like the Frozen Vesper and the Montreal Margarita — perfect for après-ski or date night.
Warm Hospitality
Led by Director of Operations Brad Bilick, the Lorette team is focused on delivering memorable dining experiences, blending classic hospitality with a love for local and seasonal ingredients.
